Job Description & Responsibilities:

Our client has several decades of cruising history and heritage and is one of the largest established operators in the industry.

With a clear healthy emphasis on employee well-being and retention they offer truly global itinerary, with new vessels joining the fleet in recent years.

In conjunction with our client HIH is looking to recruit the right caliber candidate for the role of Executive Chef.  Reporting to the Hotel Director you will have a minimum 6 years-experience with at least 2 years as executive chef aboard vessels at the higher end of the market. You will be responsible for the development and guidance of the Galley team whilst at the same time adopt a hands-on approach to food preparation and delivery.

  • Ensure a cohesive and productive work ethic within the multinational Galley team
  • Responsible for ensuring the highest standards are met for each meal and food item that is prepared and presented
  • Understand regular guest tastes and preferences and prepare dishes accordingly
  • Hands on approach to preparing meals and assisting in other duties as required
  • Speaking to diners, providing information regarding the dishes and ingredients as required
  • Ensuring correct food handling, health, and hygiene practices are followed at all times in the Galley and Restaurants
  • Minimize galley/restaurant waste in line with company policies and guidelines
  • Ensure all waste items are disposed of in strict accordance with company guidelines and these are enforced across all members of the Galley Team
  • Manage food and staffing budget and work to those parameters
  • Menu planning and food/beverage ordering in conjunction with F&B Director and Cruise Director
Candidate Requirements
  • Diploma/Degree in relevant culinary discipline
  • Minimum 6 Years’ experience, preferably 2 as Executive Chef with successful cruise working history
  • Sound working knowledge of food safety and hygiene standards and protocols
  • Pre-employment drug test clearance
  • Criminal-background check
  • Wine training and familiarity is preferable
  • Possess valid medical certificate
  • Calm, assured personality with ability to bring the out of team especially under challenging situations
  • Good communication and listening skills
